ARUGULA PESTO PASTA SAUCE RECIPE

You might look at this and think, my kids would never eat that! And that is exactly what I thought too. Except they ate it, without any bribes, they ate it and liked it! I was completely surprised, totally unexpected. So now I make this kid friendly recipe all the time because personally arugula pesto is one of my favorite pasta sauces ever and it is so easy and simple to make! Oh! and its a healthy recipe for kids, does it get any better than that?

MATERIALS:

  1. 1 cup packed arugula

  2. 1/4 cup whole walnuts

  3. 1 tsp minced garlic

  4. 1/3 cup extra virgin olive oil

  5. 1 cup almond milk

  6. 3 tbsp heavy cream

INSTRUCTIONS:

  1. Add the arugula to a food processor and puree

  2. Add the walnuts and garlic. Mix well.

  3. Scrape the sides and add the olive oil. Mix well.

  4. Heat a sauce pan on medium to high heat. Add the mixture to the sauce pan.

  5. Add the almond milk and heavy cream to the saucepan. Bring to a boil and reduce heat.

  6. Cook until it thickens up a little bit.

  7. In the meantime, cook some plain pasta.

  8. Once the sauce thickens up, pour it on top of the pasta and mix well. Serve right away.

Tip: If you want to make this recipe vegan friendly , just eliminate the heavy cream!
