HOMEMADE HEALTHY SNACK MUFFINS RECIPE

Sometimes I just need a little snack that is healthy and will satisfy my always hungry girls. Never really hungry for actual meals, but snacks, ALWAYS! I love these because you toss everything into the blender, pour into a muffin tin and done. Easy, fast and satisfying. Honestly, my husband and I eat these too. They fill the house with such an amazing aroma.

This recipe was inspired by Sascha Fitness, she is a fitness and nutrition coach and recently had a baby. She shares tons of amazing recipes for baby led weaning. I have made a few but this one is my favorite.

INGREDIENTS:

  1. 1 cup almond milk

  2. 1 cup old fashioned oats

  3. 1 banana

  4. 2 eggs

  5. 3 tbsp. Coconut flour

  6. 1 tsp. Cinnamon

INSTRUCTIONS:

  1. Preheat the oven to 375° Fahrenheit

  2. Pour all of the ingredients into a blender and liquify.

  3. Grease a muffin pan and pour in the mixture.

  4. Bake for 25 minutes. Poke the center of a muffin with a toothpick. If it comes out clean, its ready.


NOTE: the muffins will not rise like regular flour based muffins but will rise a bit and be moist and delicious!
