BANANA MUFFIN RECIPE

HOMEMADE BANANA MUFFINS

Indulge in some baking with this must try recipe. They are so good that I get excited for bananas to brown just to make these. They are great for the whole family. However, for babies, you may substitute the honey for maple syrup or agave. This is one healthy snack I feel good giving to my kids.

INGREDIENTS:

  1. 1 1/2 cup whole wheat flour

  2. 1 teaspoon baking soda

  3. 1/4 teaspoon salt

  4. 4 medium bananas

  5. 1/2 cup nonfat plain greek yogurt

  6. 3oz honey

  7. 1 egg

  8. 1 tablespoon vanilla extract

  9. 1 tablespoon olive oil

  10. Handful chocolate chips

  11. Non-stick cooking spray

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F.

  2. Add bananas, yogurt, honey, egg, vanilla and oil to a blender. Mix on high until smooth.

  3. Add flour, baking soda and salt. Blend well.

  4. Slowly add in chocolate chips.

  5. Spray the muffin trey with non-stick cooking spray.

  6. Add the batter evenly to the muffin trey (fill each container about 3/4 of the way)

  7. Cook for about 15 minutes or until toothpick comes out clean Cool for about 15 minutes. They are most delicious when they are warm!

Tip: This recipe makes 24 mini muffins or 12 regular size muffins.

Caution: This recipe contains honey which is not recommended for children under 1, use substitute suggested above.
