On their own, pistachios’ green hue can feel intimidating. But turn them into bakery-style pistachio muffins, and they’ll be an instant hint! With a soft, moist center and yummy crunchy exterior, this muffin is delicious and satisfying.
Whether you’re looking for wholesome snack ideas or want to add more color to snack time, this recipe is easy, fun, and kid-approved. Before we dive into the recipes, let’s explore what gives these pistachio muffins their naturally vibrant green hue!
Why Are Pistachio Muffins Green?
So, why are pistachio muffins green? Well, they get the color straight from the pistachios themselves! These small nuts have high levels of chlorophyll and antioxidants, which gives them that signature green hue hidden inside the shell. How To Make Green Pistachio Muffins For Kids
There are so many ways to make this recipe, from real pistachios to instant pudding mix. Below, I’ll share my favorite variations-including an allergen-friendly option-so everyone can join in on the fun!
For each recipe, wrap each muffin in plastic wrap to save them for later. If you want to warm them up or make the top extra crispy, pop them in the oven for 2-5 minutes, and you’re good to go!
Real Pistachios
I won’t lie to you guys; using real pistachios to make these muffins can be a lot of work! But the results speak for themselves. If your kiddos are already comfortable with crunchy textures and you want a more authentic taste, you’ll love this one.
Ingredients:
1 Cup Unshelled Pistachios (raw, unsalted, or roasted)
1 ½ Cups All-Purpose Flour
2 Tbsps Baking Powder
¼ Tbsps Salt
½ Cup Unsalted Butter
¾ Cup Granulated Sugar
2 Large Eggs
¾ Cup Yogurt (plain Greek or regular yogurt will work!)
1 Tsp Vanilla Extract
Steps:
Step 1: Preheat your oven to 350°F. While you wait, prep the pistachios by toasting them on a stovetop or in the oven. Not too long, though; you just need to cook them for a few minutes so the green color pops more.
Step 2: Process the pistachios in a food processor until finely ground. Make sure they’re more of a flour-like consistency, not a paste!
Step 3: Grab a bowl and combine all your dry ingredients: baking powder, all-purpose flour, and salt. Wait to add in sugar.
Step 4: In a separate bowl, beat the softened butter and sugar until light and fluffy. Then, add the remaining wet ingredients: vanilla extract, eggs, and plain yogurt.
Step 5: Gradually add dry ingredients to the wet ones, gently stirring until they’re evenly combined. Fold in the ground pistachios as you mix.
Step 6: Line your muffin tins with paper and evenly distribute the pistachio batter into each cup.
Step 7 (Optional): Sprinkle chopped pistachios on top.
Step 8: Bake at 350° for 20 minutes. Check occasionally by sticking a toothpick in the center-when it comes out clean, they’re done!
Step 9: Let the muffins cool to room temperature, and then transfer them to a wire rack to enjoy!
Pistachio Pudding Mix
This recipe is less time-consuming but just as delicious. You still get that strong pistachio flavoring, and thanks to the pistachio pudding mix, your muffins may even come out a little bit more moist!
Ingredients:
2 Cups All-Purpose Flour
1 Pack Instant Pistachio Pudding Mix
¼ Teaspoon Salt
2 Teaspoons Baking Powder
¾ Cup Granulated Sugar
2 Large Eggs
⅓ Cup Vegetable Oil
¼ Cup Unsalted Butter
½ Cup Yogurt or Sour Cream
⅓ Cup Milk (regular or plant-based is fine!)
1 Teaspoon Vanilla Extract
½ Teaspoon Almond Extracts
⅓ Cup Coarse Sugar
½ Cup Unshelled Pistachios
Steps:
Step 1: Preheat your oven to 425°F as you line your muffin tin with paper or lightly grease it.
Step 2: Grab a bowl and mix your all-purpose flour, pistachio pudding mix, salt, and baking powder. Let’s consider this your “dry ingredients” bowl!
Step 3: In a separate bowl, whisk the sugar, eggs, vegetable oil, and butter. These will be your “wet ingredients.”
Step 4: Add sour cream/yogurt, milk, vanilla extract, and almond extract into your wet ingredients bowl. Whisk until everything is evenly combined.
Step 5: Slowly pour the dry ingredients into the wet ingredients, and use a spatula to mix the batter together until smooth and blended.
Step 6: Evenly distribute your batter into the muffin cups. If you want, sprinkle the tops of the muffins with coarse sugar and chopped pistachios.
Step 7: Bake for 5 minutes at 425°F, then lower the oven to 375° for the remaining 15 minutes. This is what gets you that perfectly crunchy top!
Step 8: Once the muffins are done, allow them to cool to room temperature and transfer them to a wire wrack. Now, enjoy!
Gluten-and Dairy-Free
Whether you or the littles are allergic to gluten and dairy or you simply want a more mindful approach, this variation won’t disappoint. These muffins are just as light and fluffy as the others-and just as easy to enjoy!
Ingredients:
1 Cup Unsalted Pistachios
1 ½ Cups Gluten-Free All-Purpose Flour or Almond Flour
½ Tsp Baking Soda
1 Tsp Baking Powder
¼ Tsp Salt
½ Cup Coconut Oil, Melted
¾ Cup Coconut Sugar
2 Large Eggs
1 Tsp Vanilla Extract
¾ Cup Unsweetened Plant Milk
Steps:
Step 1: Preheat your oven to 350°F. Line your muffin tin with cups or grease it so you won’t have to do this later!
Step 2: As in the first recipe, pulse the pistachios in a food processor until finely ground.
Step 3: Mix the gluten-free flour, baking powder, baking soda, and salt in a bowl.
Step 4: In a separate bowl, whisk together the melted coconut oil, coconut sugar, eggs, vanilla extract, and plant milk until smooth.
Step 5: Gradually pour the dry ingredients into the wet ingredients and stir until combined. Once everything looks blended, fold in the ground pistachios.
Step 6: Evenly distribute the batter into the lined muffin cups. Top with coconut sugar and chopped pistachios.
Step 7: Bake your muffins at 350°F for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
Step 8: Let your muffins cool to room temperature, and then transfer them to a wire rack to serve!
